If your dashboard is still working, then you drag-and-drop them into the ‘Restore’ section. so the files are zipped when they are emailed to me?
Yes, but I don’t recommend using the email method. Unless your site is very small, the zips are likely to get too large, and your mailserver will probably reject them. Dropbox is a better choice – it’s very easy to set up, and doesn’t have file size limits that anyone is likely to reach.

You can either drag/drop them (into the relevant section of the ‘Restore’ part of the UpdraftPlus screen), or FTP them into wp-content/updraft and then press the ‘rescan’ link in the same section.

the plugin slows my site way down

The effect on your site speed will depend on: how much data you have, what resources your web hosting company provides, and what they do if you exceed those resources, and whether they overload their servers.
