    Is there any way (theme hacking included) to display feedback submitted via Jetpack's contact form (preferably by form, not for all forms, if that's even possible)? Really, I'm trying to find a relatively easy way to use Contact/Feedbacks as a sort of guestbook, since I can customize the form fields.

    I gather from this thread that Feedbacks are stored as a custom post type. So, anyone know of a plugin to access/manipulate custom post types that would let me access Jetpacks' feedbacks in a way that lets me do the above?

    That's correct. However, that custom post type is private (#), so it cannot be displayed on the front end of your site unless you force all private CPT to be public.

    To display them, you'll need to make changes to your theme. You can create a custom page template and add a custom loop there thanks to WP_Query. In that custom loop, you'll query all posts belonging to the "feedback" post type:

    Some plugins might handle this for you, but I'm not familiar with such plugins I'm afraid.
