My client told me that when he puts some products in stock, these products goes back in stock automatically. This also happens when he puts some products back in stock, these products goes in stock automatically too.

My client told me that when he puts some products in stock, these products goes back in stock automatically.
Do you have Hide out of stock items from the catalog enabled under WooCommerce > Settings > Products > inventory > Out of stock visibility? With this setting, out of stock products will become visible automatically on the frontend when the product is back in stock.
If this is not what you are referring to, can you please provide us the steps to reproduce the issue?
Also, please share a copy of your site’s System Status. You can find it via WooCommerce > Status. Select “Get system report” and then “Copy for support”. Once you’ve done that, paste it here in your response.
I can see that the Out of stock visibility is not checked.

Could it be the maintain the stock (in minute) option that is at 60. Because my client use bank transfer as an option of payment, so the command always stays in pending even if it as been paid.

Is the issue present with individual or variable products? Do the products have enough stock? Do the products have a price set?

We have this issue usually with individual products, but it did happen with variable products as well.
All the products have a price already set up.
It usually doesn’t happen when a product has a certain inventory’s quantity already set, or at least i don’t remember having issue in this case.
Most of the time we put the product in stock or out stock without the number of stock.
Here an example from yesterday, i put this product out of stock at least 3 weeks ago, and last week-end it was back in stock and a client was able to order it: https://www.poil-luxe.com/en/produit/ks-odor-stop-coat/

Thanks for letting us know. Do you are your client ever use the product import feature? If so, these can update existing products. That could change them from being in stock to out of stock or the other way around.

Is there any chance that the shop owner has accidentally changed the stock status? You could use a plugin like this to check the activity logs and keep track of the changes made.
Another thing you could try is to clone the site to a staging environment, and then check to see if you can replicate the issue with only WooCommerce and the Storefront (default) theme enabled. By doing this, you can rule out any theme/plugin conflicts.

Your hosting company may offer staging functionality. If they don’t, you can create a staging site using a plugin called WP Staging: https://wordpress.org/plugins/wp-staging/
Is it better to activate the stock Management and put a quantity or is it ok if we just put manually our product in stock or out of stock without activate it ?

It depends… when you enable stock management at product level and set a stock quantity the product will go automatically out of stock when the quantity reaches the out of stock threshold. If you want more control over the stock you can manually set products in stock or out of stock on the product data backend page.
