Hi @dylanmcevoy. By default, with Square as your SOR, the product image will only be imported into WooCommerce on sync if there is no image in WooCommerce. This behavior is the default as explained here.
I will provide feedback to our developers that you would like this feature but at the moment, there is no built-in option to modify this behavior.
That would be awesome to provide it as a feature. My client isn’t running the Woo side of things, so I can’t always keep up which images have changed.
So my only option now is to delete all the products from the store & then re import them. Every time we need new images? (I say all because I’m not exactly sure which products they are updating as these product images change.

At the moment, if you’re updating a product image in Square, you’ll want to delete the existing product image on your WooCommerce store. You can then initiate sync or let the regular sync process go through, which will update the product and sync the latest image to it.
Okay no worries. If you could make in an option to check for new images that would be great. In this case the client will be updating images on their end & not login into the website.
So the workflow will have to be:
Client Updates Images > Tells Me > I have to login to website to delete product image > Sync Update.
Having that feature would make a whole lot less work.
