This tends to happen if your server does not have adequate resources to process large requests. It can be very taxing on resources to load 999 products on one page.
I would try to disable all your plugins except WooCommerce and see if that helps. If not, you may want to reach out to your web host to see if they can increase your resources.

Hopefully that gets that working again!
