It kind of sounds like “Product Category” module may be tied to a very specific taxonomy type, specifically perhaps WooCommerce’s “product_category” and not one where which taxonomy is used is an option. However, you’d need to reach out to the support team for WPBakery for that one to be certain.
Alternatively they may have other module types where general taxonomies can be used, but at the same time I understand if this one may have the layout you’re wanting and some other one wouldn’t.

I found this link: https://docs.pluginize.com/article/17-post-types-in-category-tag-archives even with this option, no option of the created taxonomy is linked as a category in the PageBuilder module.
Is there really no solution?

If WPBakery has said that their module here doesn’t support other taxonomies, then it may be a case of no other solution available. At least when using that module. There may be others available somewhere that offer that level of settings customization.
Regarding the documentation link you mention, that’s not tied to WPBakery at all, that’s just for native taxonomy term archives that WordPress generates. It’s also related to including other post types in the out-of-box “category” and “post_tag” taxonomy archives when either of those taxonomies have been associated with a given post type.
