 * I would like to know if polylang automatically translates the text or do I still
   have to translate the handwriting and link the pages between the different languages?

 * Polylang does not translate anything automatically. You have to do the translation
   yourself. As stated in the plugin translation:
 * > If you wish to use a professional or automatic translation service, you can
   > install Lingotek Translation, as an addon of Polylang. Lingotek offers a complete
   > translation management system which provides services such as translation memory
   > or semi-automated translation processes (e.g. machine translation > human translation
   > > legal review).
