    I can style all the default fields in my forms, mainly affecting the width of the fields (for example: the input for the state does not need to be 300px wide) BUT when I go to do the same to some custom fields
    (age for example:
    #sf_ClientAge__c {width: 100px;}
    )

    it won’t work.

    The defaults do (

    #sf_phone { width:150px;}
    )

    Can anyone explain this?

    Must be an issue with something else in your CSS overriding that width further down the file.

    Try moving that particular rule to the bottom of your CSS file, if it works there, then it was getting overridden.

    OR

    Try adding !important to your CSS (not elegant, but works).

    #sf_ClientAge__c {width: 100px!important;}
