Is it possible to add in the user registration/login page a captcha service/script (like reCaptcha or similar) without modifying plugin core?

You can override the login/reg templates in WC

Yes you can do that and get the captcha to show but will it validate it properly?

I would think Woocommerce would provide a way in the admin panel to activate/deactivate this feature given all of the rampant spam going around.

You can use: http://wordpress.org/plugins/easy-captcha/
I’ve tested and it works great and is compatible with WooCommerce.
