Why option Cache URIs with query string variables disable ? I can’t not check it

It’s not available when using disk enhanced due to limitations with that caching method.

Is there a workaround for this? My site relies heavily on searches, and I’d like to cache those search result pages.

No, only using disk basic caching, which is slower or caching to memcached or opcode if available.
