The video tutorial is horrible as the author's voice echos all over the room. The author needs to speak into the microphone.

I was so excited about this cart initially until I found that it's hosted on their servers. I am not comfortable sharing all of my customers personal info on some server in Europe.
Ecwid doesn't use a "some server in Europe".
1. All the payment sensitive information(i.e. credit card numbers) is stored on the payment gateway`s servers. (for example on PayPal's or Authorize.Net's ones). Ecwid relies on the payment gateways to process orders and never touches credit card numbers.
2. All other information, such as product or order data, is stored on reliable US Amazon EC2 servers.
When you use ANY shopping cart, the main question is trust. When you use a SaaS shopping cart provider(e.g. Ecwid), you should trust it.
If you use a shopping cart installed on any hosting, you should trust your hosting provider, because it stores your store data on some servers too.
By the way Ecwid isn't a newly created company. It's made by the same company who made X-Cart(widely known PHP e-commerce app) and X-Payments (one of a few PA-DSS validated PHP apps in the world).
