It’s not WordPress 5.6. The problem seems to be related to one of your plugins. Try following the suggestions from these two FAQs to find out what’s causing the issue:

All you suggested I already did.
But I found the problem.
First of all it had to do with the multiple changes of the last days of the Yoast SEO plugin.
It stopped creating links and with the latest update of Yoast all goes well.
Except it seems it affected the permalinks for the latest posts.
After saving 2 times the permalinks in the settings of WordPress the Latest Posts show up again.

That’s weird. Yoast SEO shouldn’t cause a conflict with WPP. I’d expect this from your caching plugin for example (WP Fastest Cache.) I bet you’ll be back soon reporting the same issue 😛 (hopefully not though haha.)

Hola Héctor,
YOAST did had a problem with permalinks when Optimizing SEO Data my database with more than 300K postings. If you have not that amount of postings it should run fine.
Anytime the optimizing stopped, the Popular Posts were showed till the stop at the frontend but latest posts were not actualized.
I had to save the permalinks twice and restart the SEO optimizing again and when finished, got the message from Yoast “SEO data optimization complete”.
From that moment on the Popular Posts were updated and displayed.
Yoast updated several times last days the plugin for a faster indexing, (accidentally solving) permalink bug and some other bugs and now I don’t need to optimize manualy or saving permalinks anymore.
The only thing I forgot, but did not known, I had to save the permalinks after the latest update of Yoast what caused the blank Popular Posts with the message “Sorry. No data so far.”
In the future I will do this in my case with that kind of growing SEO data.
Not logical for blaming WordPress 5.6 or WP Popular Posts, because at that moment I did not realize what the cause was. Later I realized the relation Yoast – Popular Posts
