[Plugin: Custom Post Type UI] Want new Taxonomy trated like categories not tags

How do you (or can you) set a new taxonomy to be treated like categories, not tags on the post page? Categories lists all the ones available, and tags just lets you type whatever you want in. I want to require users to pick only from the choices I list.
