It sounds like this error appears when you have not selected a category in WordPress. You can read more about this here:

When I choose the EDIT that page, I’m taken to our main Products page and I don’t see category (as per the instructions). Can you elaborate for this scenario?

The Product Categories tab is on the right-hand side of the Add New Product panel.

Are you able to assign a category to your products by going to Products > All Product > hovering the product > Quick Edit > Product categories?

If no categories are showing up make sure you’ve created Product categories. More info on this can be found here: https://docs.woocommerce.com/document/managing-product-taxonomies/#section-2

All of the products ARE in categories. I just don’t get how you satisfy Google with the page breadcrumbs…ie: page/8/
