Hi Sam, I have read your numerous bug reports. The total amount spent by each customer is no longer available in the WC REST API output. I will remove that column in the next update.

We have no way to get that information in other ways?
Is there no way to connect an order with the total order quantity?

WooCommerce probably have a good reason for removing total_spent
from the Customer API response, perhaps the extra processing was causing problems on some servers.
You can customise the API response using the woocommerce_rest_prepare_customer
filter, however, if it is not supported by WooCommerce core it will not be supported by WooCommerce POS by default.
