We are not able to reproduce this using v11.4 of Yoast.

Verified the right template variables are in the RSS section. See image: https://pasteboard.co/IjZBLab.png
Added a site title: https://pasteboard.co/IjZC1rq.jpg
Went to the RSS feed for the subsite and the right SiteName of the subsite appears: https://pasteboard.co/IjZCnZo.png
We would like some more information.
1. Can you confirm you are using the most recent Yoast SEO, v11.4? If you update, does the issue resolve?
2. Can you confirm you are using WordPress 5.2.1? You can check by clicking on the W in the top left and selecting About. If you need to update, please check with your host provider. Please know that if you are using an older version of WordPress Core you may experience unexpected behavior with Yoast. 3. Are all your non-Yoast plugins and themes also updated?

I am using the most recent version of WordPress (5.2.2) and Yoast SEO (11.6), as of this writing; however, there seems to be a bug in wp_title_rss()
insofar as it does not respect switch_to_blog()
.
My solution was to write a custom plugin that constructs the feed(s) with a modified feed template that collects the title from bloginfo( 'name' )
for the current site.
