A checkout without payment gateways is useless. I’m sorry for the frustration. I do know that we have a development team working on WooCommerce blocks currently, but I’m not sure exactly why incorporating other payment gateways into it doesn’t seem to be a high priority right now. That being said, getting these block to work is a pretty big undertaking, as every single plugin that modifies the cart or checkout UI in any way needs to have additional code added to work with blocks as well, so they’re trying to build the blocks with this compatibility in mind.
