Parent categories only to show up in side bar

Hi, I want to set up my blog so that only the parent categories show up in my blog sidebar. I want the child categories to display only when a parent category is clicked on or hovered over – child categories to show up as unfolding or in a drop-down menu.

Any help or direction on this would be greatly appreciated.
