The site title and the tagline are changed in the settings from the dashboard.

    Dashboard –> Settings –> General

If you don’t need CloudFlare to talk to your origin server(s) via https then I’d leave things exactly as they are there.

You mentioned having issues with restoration after things ‘went south’ but I don’t see a backup plugin in your plugins list. Surely you have some backup system running there… right?

If you really want to go static you might give a look at the WP2Static plugin. It’s quite a handful to figure out but I have one site here running it in a test mode and love it.

You’ll be able to serve your website as static pages while using all the WordPress tools to build with including your ‘Eliminator’ page builder, the Block Editor (Gutenberg), and the Classic editor as you wish.

The next time you feel the need to do a search and replace across your database try copying your old data base first via PHPMyAdmin or Adminer and then make the changes there. You’ll then have a new database to edit and then switch to… If it doesn’t work, switch back and you’re up and running again.
