Hello everybody
I have build a plugin that includes a small extension and three page templates , how can I package all the files in one zip extension file ?

Have you been through the plugin developer’s handbook, especially https://developer.wordpress.org/plugins/wordpress-org/ ?

I used Tortoise to create the zip file : for the extension itself, it worked perfectly, the problem if for the 3 page templates (that works with this plugin) that are going in the plugin directory and not in the current theme directory how can I solve this problem?

Page templates provided by your plugin belong in the plugin directory. See https://developer.wordpress.org/reference/hooks/template_redirect/, https://medium.com/@eudestwt/wordpress-how-to-make-available-page-templates-from-your-plugin-6a6a56846b51, and of course, the plugin developers guide.
