I have the same problem. The Foo Gallery ist not shown in Oxygen Builder.
I inserted the gallery with the shortcode button inside the Oxygen Builder, but no gallery is displayed. Only a text “The gallery was not found!”
Unfortunately I cannot show an online example because my site is under construction and installed locally. Maybe you can retrace it anyway. I think it’s due to the structure of the site builder but maybe you will find an adjustment because the Oxygen Builder is becoming increasingly popular.

I would like to keep FooGallery as I am very happy with it on other sites and I am reluctant to recreate my 128 galleries.

I got a copy of Oxygen and managed to test it out, but it works 100% for me, so I am not sure what the issue is for you.
I created a new page, then added a gallery shortcode, and it immediately showed up in the builder without saving or refreshing. I then tested the page on the frontend and that worked fine too.
Sorry, I was hoping to reproduce the problem so I could provide insight.
There could be an issue with other plugins, which might cause the javascript to have a conflict.
My suggestions is to update both Oxygen and FooGallery to their latest versions (which I was using) and try again

As I found out now, the normal responsive gallery works. But e.g. the mansory or aligned gallery are not displayed.
I have now used small standard responsive galleries on some pages – for example > http://2020.redcougar.de/fakten/modelle/
But for my larger galleries (up to 200 pictures) in the future meeting-area of my site, the aligned galleries would be nicer.
I have the latest version of every plugin.
