Overriding/Altering Classes

    What is the standard process (if any) for editing the classes?

    I am trying to alter a fairly core process. The goal is to create a separate order for each item, rather than having multiple items per order. This would involve altering the class-wc-checkout.php file, and I am not sure if that is okay to do or not.
