Order emails based on category?

I’m putting a basic website together for a pizza store with 5 branches.
Client wants an email to go to the branch selected plus himself for all orders (he controls all 5 branches)
Some branches don’t sell all products, so have set up 5 categories (branch names) to allocate to products to hopefully make this work.

Any suggestions on what to do from here greatly appreciated thanks!!
