This feature is almost read and will be released in V8.00, along with a modern admin interface based on the twitter-bootstrap framework. Expect the release this week.

I am updated, but do not see this option in posts creation / edit post. Is it something I need to enable? Or perhaps this is a Pro feature?

It is on the plugin admin page. Near the bottom right corner of the Easy AdSense tab on the admin page, you will see a section called Suppressing Ad Blocks, where you can select the categories and pages where the ads will be suppressed. But your idea of having a checkbox while editing or quickediting the post is even better. I will try to implement it.
Unfortunately, this AJAX version of the plugin is going to be removed and reverted back to the non-AJAX version later today, due to public demand, and other unrelated circumstances. After that, this feature will only be available in the Pro/AJAX version.
