Hello — We have several shipping options. How I can ensure that only one shows for certain products? Some items are only shipped domestically, and require a signature.

It sounds to me like you want to use shipping classes to group the domestic products together. Here’s a guide on how to use the shipping classes: https://docs.woocommerce.com/document/product-shipping-classes/

Hello Claudiu — No, that did not work. The other shipping rates still show. (The new one also does. But I am hoping to only offer one option for that product:
