I’m also having this problem with required fields. If none of the fields are required the form processes properly.
I have copied the form markup from viewing the page source, and inserted that into the page instead of using the shortcode, and it works again.

I’m getting the same message. People are filling in those two fields and then getting that message.
My case: After implementing Cloudflare security and disabling reCAPTCHA, I encountered an issue with the Contact Form 7 plugin indicating “One or more fields have an error. Please check and try again.” However, the solution was straightforward: by adding Cloudflare Turnstile just before the submit button in the form, everything returned to functioning correctly. I appreciate the seamless integration! If you need to make similar adjustments, remember to modify the form template to include the Simple Cloudflare Turnstile Plugin [cf7-simple-turnstile] right before the submit action. After disabling Recaptcha and enabling Cloudflare Turnstile using the Simple Cloudflare Turnstile WordPress plugin, I have the same error, which I’ll describe below.
When users try to submit our contact form, they get this error with an orange border around it.
There was an error trying to send your message. Please try again later.
When I go to the WordPress Contact Form 7 backend, I see this message next to the form.
! 1 configuration error detected
When I edit the form, then go to the Mail tab, I see this error:
!1 configuration error detected in this tab panel
Though it doesn’t give more info about how to solve it.
One additional note. I had to add this to my form template in CF7 to get the Turnstile to show up on my forms.

All it’s OK for me.
Could you edit “Contact Form” and add [cf7-simple-turnstile] after submit buttom? Also, verify setting email configuration https://contactform7.com/setting-up-mail/
For example:
[tel* phone placeholder “Phone Number”]
Submit
[cf7-simple-turnstile]
