    How do you take one category of posts and make all the posts from that category show up on one page? I want to make a blog page and a sub-page of each blog category

    That makes no sense. Can you please explain it to me?

  3. That page is as simple as it gets:

    For instance, when a viewer clicks on a link to one of the Categories on your site, he or she is taken to a page listing the Posts from that particular Category in chronological order, from newest Posts at the top to oldest at the bottom.

    this is done by wordpress itself.
    Just change your permalinks to %category%%postname.

    if that doesn't help. use a custom query as;
    then run the loop.

    you can download the 'mystique' theme form http://wordpress.org/extend/themes/mystique

    I am not aware of any plugin which does what you want (this is not the purpose of plugins, anyway)

    you can use page templates http://codex.wordpress.org/Pages#Page_Templates
    with a corresponding query

    or possibly you can use http://wordpress.org/extend/plugins/page-links-to/ to point the 'News' page to the category archive of the 'News' category
