Offering consulting services through a WordPress site?

My first post in the forums, happy to be here. I’m building a site through which I’d like to allow my users to purchase tech consulting time with me. I’d like for them to be able to pick the amount of time and then pay in a woocommerce-like way. The thing is, I’m not sure how to keep track of who’s paid, when they did, if they already ‘redeemed’ their time, and so on. I’m a bit lost here, so I can’t be completely clear about what I’m looking for. Mainly, I just welcome suggestions (plugins, etc) that would be a good way to allow my clients to pay for my time online, then schedule with me later, and allow me to keep track of who paid when and if they’ve already used the time they paid for.
