I’ve installed the plugin, network activated it (using on a WP Multi-site), Updated the template. However my site doesn’t seem to be using the template/ WP Better Mail at all. Have I missed something during the install?

I discovered that I couldn’t network activate but I had to activate site by site in order to get this to work. All good now.
