I started having the same issue in the last couple of days. Here’s how I found my solution:
After an online chat with my host where they had me test the form in real time, this is what I discovered. The problem was that the “From: [your-name] <[your-email]>” made the sending email come from some other domain (the form submitter’s email). So in addition to adding the additional headers “Sender: noreply@mydomain.com
Reply-To: [your-name] <[your-email]>”
I needed to change the from to “noreply@mydomain.com” as well. Problem solved.

That’s the exact response I normally tell people as well, but the development version of my SMTP plugin changes the MAIL-FROM to your address and allows the Contact Form 7 From address to remain as your visitor. It’s a brand new feature. Would you like to try it?
