The experimental block-based product editor has been deprecated since 10.1, and its feature toggle is now removed from the WooCommerce admin UI for most users.
If you already had the block product editor enabled prior to updating, you will continue to have access to it and its toggle in the settings. The editor is not forcibly disabled for existing users.
If you disable the block product editor, the option to re-enable it will be removed from the UI. You will not be able to turn it back on through the settings screen.

I have updated WooCommerce with the block product editor disabled, and now I cannot turn it on.
What would be the solution to enable it again?

Thanks for following up! As my colleague mentioned earlier, since you disabled the block-based product editor before updating WooCommerce, that’s why you can no longer see the toggle in Settings → Advanced → Features.
The important thing to note is that this feature has now been deprecated. That means if you had it enabled prior to updating, you’d still be able to use it, but once it’s turned off and you update, it’s no longer possible to re-enable it through the WooCommerce settings.
At this point, the only way to bring it back would be through custom code to manually force-enable the feature flag. However, since this editor has been deprecated, we don’t recommend relying on it for production stores as it won’t receive continued support. Instead, the team is working toward more stable and permanent product editing improvements that will eventually be rolled out.

I’d suggest keeping an eye on that page and the WooCommerce release notes for updates on the future direction of the editor.
