The most common issue is cache either the plugin cache, deactivate and re activate to clear.
Or theme cache.
After that it gets complicated, sometimes an API key is for one organisation only yet the events are over several.
In this case it is best to start using the Eventbrite API explorer to examine the underlying data to find out what is happening.
We would normally do this for our pro clients, but on the free forums it is not permitted to share the API key ( so please don’t offer ).

I had a look but couldnt see anything that helped. We are having issues with Siteground caching on this site but its been disabled since Friday.
When I use the demo on your site with our API Token it loads the same events as on the site with some missing so I will go back to my client and check the Eventbrite side.
The best way is using the Eventbrite API explorer and compare the the data between an event that shows and one that doesn’t.
You can even post the JSON of two events here as the JSON data is public ( assuming the event is public )

Couldn’t see any difference. I was about to start tearing hair out but thought I would try set a limit on the shortcode before I did. Not sure why exactly but that seems to of solved it. Is the default 5 by any chance?
Yes the default is 5.

Option: limit [default 5] ( +ve integer ) sets the number of events to display, the soonest first, good idea on calendar layouts to set this to a large number like 9999
