there you have stile.css…and look for the font and color of the header text…if it is not there i think you have to find manually the file on your site>:(

ok, you should find thet header picture on your site, when you find thet picture..just copy and paste to your desktop, then you should make text and background with new colors in a adobefireworks or adobephotoshop, for thet theme thet you have thet is the header picture, and you have to change a text just in some picture program , there is no css stile for thet, at least i think so:)
and i just look for the second site
i dont know for sure for your second site….try to find css, but try the first thing what i told you in your appearense-editor-stile.css…i really dont know for sure:)
or in admin appearence-editor and then in a right sidebar if you have theme function.php
it depends of the theme you use:)
