Modify product field names on Invoice / Delivery Note

Hi,
Is there a way to modify the product field names on the invoice / delivery note? Specifically I want to change ‘Shipping’ to ‘Shipping & Handling’.

I’ve looked through the plugin files to find the right hook, but haven’t been able to nail it down yet.

Any help appreciated!
