If it is greyed out it means that you’ve already added this filed to your form.
Please make sure that it is not on your form.

That’s the odd thing. I added it at one point but then removed it. It’s no longer present on my form (I’ve double checked).
I don’t appear to be able to make this available again.

Can you please try to do a conflict test and see if this issue goes away.
Here is the doc on how to do a conflict test if you are not sure how to do it.
Please also try to create a new form and see if you can add/remove the Mobile number field.

My workaround was to create a custom profile form (not a copy of my default) from scratch and the mobile field option was available to use. And of course change the shortcode on my profile page for my new custom profile form.
Upon inspection of the database, for whatever reason the mobile option just did not clear in the database row for that particular default profile.
