 * Is it possible to migrate the whole database from my development site to production?
   Preferably with a dump to a local file in between? I’ve added a lot of fields.
 * Is it as simple as going to phpmyadmin and exporting the data that way?

 * That will work, the only thing you’ll miss are the settings, which are stored
   in the options table. The option is named “participants-database_options” if 
   you want to copy that over as well.
 * The plugin uses three of it’s own tables, you’ll need to copy all three.
