I think this is a unique (edge case) issue, but if anyone is facing the same problem, please share your voice.
Please ensure you are using the latest version of WordPress and The SEO Framework, and don’t forget to test the theme for conflicts by switching to a default (Twenty-…) theme.
If saving post metadata fails, please see if there are PHP error logs. You can consult with your hosting partner to activate and read these.
You can also start debugging yourself; learn more here: https://wordpress.org/support/article/debugging-in-wordpress/. Please consult with your hosting partner if this is new to you. With WP_DEBUG enabled, if you see errors on your screen after saving the post, they can indicate where the issue is.

After some digging. The issue was a conflict with a schema plugin that played fine with SEO Framework. I have subsequently disabled it and Seo Framework now is working as expected.
