 * Is there a function in your theme for creating separate Single posts in the admin
   panel with a different set of blocks for the post?

 * Just to confirm I understand, are you looking for a way to give different Single
   posts their own distinct block layout, right from the admin panel, like FSE block
   themes? If so, OceanWP is a classic (non-block) theme, so that FSE approach isn’t
   available natively.
 * However, there’s a workaround I’ve tested that works well. You can go to Appearance
   > Design > Patterns and create a custom pattern with the block layout you want,
   then insert it into any post. Since these are regular patterns, each post gets
   its own independent, fully editable copy, so you can change the content freely
   per post without affecting others. This gives you the same result, a unique block
   layout per post.
 * Something similar can also be done with other page builders. For instance, you
   could follow the same approach with Elementor. From WP Dashboard > Elementor 
   > Editor > Templates, you can create several templates with the custom layout
   you have in mind, then insert that template into the Single post page and edit
   it there.
 * Otherwise, this would involve some customization in the code, if you’d like, 
   I’m happy to explain that approach too, though it does mean modifying the code
   and building a template, which could take a fair amount of work.

 * I need different template for posts with Gutenberg, don’t need any page builder
   like Elementor or Divi.
 * The 1 template should support:
    - title;
    - short description;
    - featured image;
    - date and time;
    - location or online-access information;
    - organiser;
    - full description;
    - programme or downloadable document;
    - external information or registration link;
    - categories and tags;
    - available language versions.
 * A booking or ticketing system is not required.
 * The 2 template should support:
    - title;
    - author or editor;
    - publication year;
    - cover image;
    - publisher;
    - short description;
    - bibliographical information;
    - ISBN or other identifier;
    - language;
    - downloadable PDF or external link;
    - categories and tags;
    - available language versions.
 * This section is intended as a structured publication catalogue, not as an online
   shop or advanced digital repository.
 * Can I create this two different template?

 * Thanks for the details.
 * Unfortunately, this isn’t something OceanWP theme supports natively.
    It would
   need customization, either through a plugin or custom development, for example
   building a new custom post type and taxonomies, which falls outside the theme’s
   scope.
