Do each of the three bookings need to be assigned to the separate events or do you want one “master” event / booking?

The idea is to have One event and booking.
I’m interested in a feature like this as well. I’m thinking for things like a recurring pottery class or workshop that maybe meets once a week for a few months. sausb mentioned 3 separate bookings, but in my case, we’d want just one booking for an event that occurs on several days.

I think the only way to do this would be to set up the events using a combination of single events and recurring events as needed.
Then, enable bookings only on the first event (this will be your “master” event).
You can then you use the shortcode below, replacing 123 with the Post ID of the master event, wherever you want to show the master event booking form:

Thanks caiman_nwl! I’m not sure that the less technical people who would be creating these events would really understand how this would have to work (and in my case, they wouldn’t use this every day, so even if they made it work, they’d likely forget later on). We’re planning to just make it work with single events for now (including start and end dates) and including the days on which it occurs in the title (for example, ‘Pottery Class – Wed/Fri Evenings’).
Is there any chance that feature for single bookings for events with multiple non-consecutive dates is planned?
