 * I want to have a separate page for each different category I created for my posts.
   I thought I had read I could do it, but I can not find the information again.

 * You don’t have a separate “page” as such, but you do have individual URL’s for
   each category. The easy way to find that is to go into the categories in your
   admin area, and when you hover over each cateogry, there’s an option ofr ‘View’.
   If you click on that you’ll see that categories archive page. You can add categories
   to a custom menu as well.
