    I’m starting a new site and would like for links to remain black but underlined (different color).

    I’ve added the following CSS which works a treat:

    .single-post .entry-content a {
    text-decoration: underline;
    text-decoration-color: blue;
    }

    However, when editing posts in Gutenberg – links are not visible, ONLY if I hover over them.

    Is the only solution to make links a different color?

    you can try this:
    `.single-post .entry-content a {
    position: relative;
    padding-bottom: 2px;
    color: black;
    text-decoration: none;
    }

    .single-post .entry-content a::before {
    content: “”;
    width: 100%;
    height: 1px;
    background-color: blue;
    position: absolute;
    left: 0;
    bottom: 0;
    }
