Hi all, I was wondering if anyone had good suggestions on sites that feature videos or written tutorials on how to develop WP plugins? This is an area I feel very weak in and would like get better at. It can be paid or free.

Look at the plugin Hello Dolly. That tells you how simple it is to write a plugin.

Check out DX Plugin Base – https://github.com/mpeshev/DX-Plugin-Base – there is extensive documentation with a training video and sample snippets for most things you’d use in a WordPress plugin.

It’s available here on WordPress.org as well – https://wordpress.org/plugins/dx-plugin-base/ – you can fork it and change the bits that you need (and remove the ones that you don’t).
