We checked the example page and the meta description that Yoast SEO displays is “Fleur de Lin, décorateur vous accueille à Caen dans le Calvados (14) et vous conseille pour vos rideaux, tapis et tissus.”.
Could you give us more details about the problem with latin text? It may help to send us an example URL or link to a screenshot that highlights the problem.

Thanks for sharing the relevant image here with us. Per the information you provided, the meta description that you defined on Yoast SEO to the front page of your website isn’t appearing on Google search results. Let us know if we misunderstood anything here.
We looked at the front page https://www.fleurdelin-caen.fr/ of your website and can confirm that Yoast SEO is generating the meta description correctly as expected. This means it’s up to Google now to detect that and show the relevant meta description in the search results.
However, depending on the search terms and many other factors, Google shows a different meta description and modifies the meta description. You can find more information about this here: https://yoast.com/help/my-meta-descriptions-arent-showing-up-in-the-search-result-pages/
Note: we’re afraid to say that there’s nothing much we can do from the plugin to prevent that as Google doesn’t offer such an option.

@duboi Can you please let us know what you are using for the Google search query when you are seeing the latin version of the meta description?
We reviewed the source code of the home page of your site and did find the latin text in the following section (see image here):

<p>Vitae finibus tortor turpis et tellus. Nullam pellentesque venenatis neque, in congue diam iaculis eget. Phasellus fermentum velit sed libero vitae finibus tortor. </p></div>
This appears to be part of some type of text widget. To make Google not show the latin text for any type of query we would recommend removing this text from the widget in question.
