go to SEO, Social Networks, Social accounts Twitter to change this but it doesn’t really matter, Twitter will do the redirect.
Note that we’ll remove the sameas schema soon, Google has deprecated it and it’s not useful anymore.
The twitter:creator is taken from:
– Twitter user meta if available
– Twitter account from SEO, Social Networks, Social accounts Twitter

If I change it by removing the “@” (as you suggest), then the “twitter:site” will be wrong. I know that it will be deprecated soon, but it’s nice when things are done how it should, instead of relying on the idea that Twitter will fix it with an automatic redirection. Don’t take wrong, I’m just a perfectionist!

Just as a suggestion: You should include the “twitter user meta” in the WP user profile, it’s not included by default. I asked this question because I noticed this behavior in one site that includes this field inserted by another plugin, that’s why I saw that your plugin was taking this value and seeing in another site I realize it’s not included.
