Could you send me some example links to the poor compression? There are ways to selectively disable Photon using filters, but ideally, I’d rather us figure out the actual problem!

All of my photos have “artifacts” around the edges and generally look blurry. I just re-activated Photon so you can see the difference.
For example, the first photo here, has artifacts around the wine glass, each spaghetto has artifacts on it, and the meatballs look fuzzy, not sharp…

The step-by-step photos displayed in Jetpack Gallery, further down the page, all show round bowls, cookers and choppers with jagged (not smooth) edges.
None of the images on the website are sharp, clean, or losslessly compressed.
If lossless compression not possible, I would rather NOT have any compression at all and only turn it on for image-heavy pages, such as my recipe index:

P.S. In case it matters, I have this code in my theme’s function…

Photon’s compression is lossless by default. You can enable lossy compression, but that’s not enabled on your site at the moment.
Photon creates a resized version of each image on your site, based on the original image you uploaded to your site, and that was downloaded by Photon.
Looking at your example above, here is the original image you uploaded:

As you can see, the quality of the 2 images is very similar:

The original image is very large (3355 × 1889px), but is a bit blurry. Unfortunately, the defaults appear more clearly on the resized version:

The version resized by WordPress, on the other hand, smoothes things out a bit, and looks better:

Unfortunately, Photon doesn’t use that resized version, and starts from the original image.
Could you try uploading a smaller image, and see if it helps?
