    I see there’s a “Default Post Format” selection in Postie which is close to what I need but not exactly due to my theme’s layout. I created a new post layout file (from single.php) that I’d like all of my Postie posts to use by default. Is there any where I can do this?
    I know it’s just one extra click in the Post dashboard area to select a different template, but I have Postie auto-publishing everything, so I’d like to preemptively remove that step.

    It sounds like your theme is providing something that isn’t part of standard WordPress. In order for Postie to do the same thing you’d need to figure out how the theme specifies the template for the post then create a Postie AddOn to do the same thing. See http://postieplugin.com/extending/
