Unfortunately, not with the built in WooCommerce attributes/variations – each variation is effectively an individual product so you can only select 1

Thanks for the quick response, I will have to rethink of alternative options.
I have a third paper plugin that does something similar, but its literally that extra function would solve a lot my requirements.

In addition to what @seank123 suggested, you can also try using the Product Add-Ons for WooCommerce plugin. This plugin allows you to add options via text boxes, dropdowns, text areas, checkboxes, custom price inputs, and even sample images. Add-ons can be added globally or per product from the edit product page.

@roastbeef I used the standard way WooCommerce handles products and attributes, then used the add-on was a Yith plugin called YITH Color, Image & Label Variation Swatches for WooCommerce to handle multiple selections with swatches.
