Try downloading WordPress again and delete then replace your copies of everything except the wp-config.php
file and the /wp-content/
directory with fresh copies from the download. This will effectively replace all of your core files without damaging your content and settings. Some uploaders tend to be unreliable when overwriting files, so don’t forget to delete the original files before replacing them.

I have done all the above but still get the same error.
I am not super tech knowledgable so maybe I made a mistake.
I have downloaded wordpress and successfully installed it for 2 other websites using the 5 minute installation so I don’t know why I can’t do it this time
Any help would be amazing!

The issue is probably something wrong with Softaculous’s installer.
Try again, but install manually: https://codex.wordpress.org/Installing_WordPress

So, you’re having the same problem after a manual installation?
If so, did you delete the old installation first?

Is it a fresh installation, no plugins or added themes?
What version of PHP is your server running?
