Hi, is this on update or first install? It sounds like a corrupted zip download or a file/folder access rights issue.
If you un-install the plugin are all the files deleted or are there any files (or directoy /easy-fancybox) remaining? If so, try deleting the complete /easy-fancybox/ directory that remains inside the /wp-content/plugins/ folder and install the plugin straight from within the WordPress plugin installer.
