Those pages could be index if you submitted a site map. Otherwise, they might not be found since no links would exist from the home page.

but the page “coming soon” is not the futur home page!
I woould only index the page “coming soon” but not the other page including the futur home page
If I put this in my robot.txt :

Disallow: /
sitemap:
domainename
the futur home page of my website risk to be in the index ?

When you enable “coming soon” on the home page only, will that allow search engines to index/recognize and link to the other pages on your site, or will the whole site be blocked from them as if you had the coming soon page activated on the entire site?

You need to submit a sitemap with your homepage URL only. Other pages will not be found since no links/pages will exist from your site homepage.
You can use a third-party plugin in submitting a sitemap.
